What is almond cake?

Almond cake is a cake that usually contains almond paste and almond extract. It pairs well with a powdered sugar topping and fresh fruit, according to cookbook author David Lebovitz. Other popular accompaniments include candied cherries and poached pears.

Almond paste, a critical ingredient in almond cake, consists of ground almonds, sugar, glucose syrup and water. Many brands also contain almond extract and egg whites. A similar ingredient, marzipan, contains more sugar and approximately half the amount of ground almonds found in almond paste. It has a sweeter taste and a finer texture. Consequently, it is not a suitable substitute for almond paste.
