Albacore is a species of tuna found throughout the Pacific and Atlantic oceans and the Mediterranean Sea. It also called white tuna or longfin tuna, and it has a firm texture, large moist flakes and a mild taste. It is one of the two types of tuna commonly sold canned.
Albacore have a dark blue upper side and a silvery white underside. The albacore's maximum size is 4 feet long and 88 pounds, and they can live up to 12 years. Their most distinctive feature is their extra-long pectoral fins. The other species of tuna are skipjack, bigeye and yellowfin.
