The average time for an oven-roasted brisket is 1 1/2 hours per pound at 250 F. For braised brisket, the average is one hour per pound at 350 F.
Brisket is a relatively inexpensive cut of meat because, if not cooked properly, it can be tough. Cook brisket at a low temperature for a relatively long time to break down fibers and connective tissue. The long, slow process results in a very tender, juicy brisket. To achieve this, some cooks prefer slow roasting briskets while others prefer to braise. For both methods, the key is to keep the meat tightly sealed while cooking.
