Bulgur is a whole wheat grain made from parboiled dried cracked wheat, usually durum wheat. It is commonly found in Indian, Middle Eastern and European cuisines, and is also known as "dalia" or "jarish."

Bulgur is high in fiber, low in fat and cholesterol-free. One cup of cooked bulgur contains 151 calories, 0.4 grams of fat, 8.2 grams of fiber and 5.5 grams of protein. As a wheat grain, it contains gluten.

Bulgur is a key ingredient in the traditional tabouli salad, but can also be used in dishes as a substitute for rice, couscous or other whole grains such as quinoa.
