Can you freeze raw carrots?

Raw carrots can easily be frozen at home to preserve their freshness, but they must be blanched first. Quickly boiling carrots in water destroys enzymes that would otherwise break down their nutrients over time in the freezer.
To freeze raw carrots, first wash and peel them and prepare a pot of water to boil. There should be enough water in the pot to completely cover the carrots (breaking them into smaller batches is fine). Chop the carrots if desired, and when the water is boiling drop them into the pot. Whole carrots take about five minutes and chopped carrots take about two. Remove the carrots from the water, and transfer them into an ice bath to stop them from cooking.
