To make the cookies, preheat the oven to 375 degrees, and combine 3 cups quick-cooking oats, 2 cups packed brown sugar, 1 cup softened butter, 2 teaspoons vanilla, 1 teaspoon baking soda and 1/2 teaspoon salt in a bowl. Beat the ingredients using a hand mixer on low speed until combined well, and then add 1 1/2 cups of flour.

Drop teaspoonfuls of the dough onto a lightly greased cookie sheet, and bake the cookies for eight to 12 minutes or until the edges brown.
