What can I use instead of white wine vinegar?

Other types of vinegar may be substituted for white wine vinegar, particularly more delicate vinegars such as apple cider, rice wine or malt vinegars. When using a harsher vinegar such as white vinegar, adding a small amount of sugar makes it a more appropriate substitution.

Vinegars with very unique flavors, such as balsamic vinegar or vinegars containing herbs, are less appropriate substitutions for white wine vinegar. If no variety of vinegar is available at all, an acidic ingredient such as lemon juice may be substituted. Twice as much lemon juice is required to match the acidity of a given amount of vinegar.
