Caproic acid is a carboxylic acid, which means that it contains a carboxyl group of COOH. It comes from the chemical hexane and has a pKa value of 4.88. It is an oily liquid that is used as a flavoring agent in dairy products, beers, nuts, breads and strawberry-flavored foods. The word "caproic" comes from the Latin "capra," which means goat. Caproic acid gained this name due to its goat-like odor.
