Fenugreek seeds can be eaten whole, sprouted or powdered, or as a sauce or as a paste. The strongly flavored seeds are used to add flavor to savory dishes in Middle-Eastern, Indian, Mediterranean and Asian cuisine. The seeds have a tangy, bitter, burnt-sugar flavor.
The seeds are hard and small and are mustard yellow in color. They should be eaten in small quantities because of their strong flavor. Deep frying the seeds will mellow the flavor. The seeds are hard to grind by hand, so if a coffee grinder is not available, buy the seeds pre-ground. One can store the whole seeds in an airtight container in the pantry for up to a year. However, one should refrigerate the ground fenugreek seeds.
