Why is EDTA added to foods?

EDTA is added to food as a preservative and is a chelating agent that grabs and sticks to other molecules. EDTA is also commonly added to certain food and beverages to help them keep their flavor and color.

It is effective at helping to stabilize mixtures of fats and oils preventing them from separating. For this reason, it is commonly added to mayonnaise and helps to extend its shelf life. EDTA is also found in salad dressings, margarine, canned cooked beans, pecan pie filling and distilled alcoholic beverages.

EDTA has been approved by the Food and Drug Administration as a food additive that is generally recognized as safe in small quantities.
