An elephant ear mushroom is a red false morel. An elephant ear mushroom is poisonous and is also known as Gyromitra caroliniana, Arkansas morel and brain mushroom.
Elephant ear mushrooms varies in size from 2-8 inches. A false morel is a mushroom that has wrinkles, folds or flaps. The irregular caps of false morels resembles a brain or is shaped like a saddle. When a false moral is sliced it is apparent that the cap has a chamber. The stalk of a false moral has cotton-like white tissue. False morels grow in the woodlands in the spring, summer and fall.
