The first book written by Mary Ann Esposito was "Ciao Italia," which was published by Morrow Cookbooks in 1991. The book was published as a companion to her television cooking show by the same name.

"Ciao Italia" focuses on preparation techniques and history and provides both simple family recipes like polenta con formaggio e verdure, or polenta with cheese and vegetables, as well as complex recipes, such as chicken and rabbit with juniper berries. Esposito has written 12 books on Italian cooking, including "What You Knead," a book about breadmaking published in 1997 by Morrow Cookbooks, which was named one of Food and Wine magazine's top cookbooks for 1997.
