What is Creole seasoning?

Creole seasoning is a mixture of paprika, dried oregano, ground black pepper, kosher salt, cayenne pepper, granulated onion, dried thyme and granulated garlic. It may also contain dried basil. Once combined, the seasoning stays fresh for up to three months if stored in an airtight container.
Many popular Creole recipes call for this seasoning along with the "holy trinity" of onion, bell pepper and celery to add depth of flavor to the finished dish. Creole seasoning is a staple in Gumbo — a stew-like dish that features either seafood or chicken and sausage — and jambalaya.
