First, prepare the beets by trimming the tops to one-half inch, and leaving tap roots on. Cook the beets in boiling water for about 30 minutes for small beets, or about 50 minutes for medium beets. Alternatively, cook the beets in a vegetable steamer or pressure cooker until fork-tender.

Cool the beets in cold water and peel immediately. You may freeze small beets whole. Cut the bigger beets into one-quarter inch slices, or cube them. Spread the cooled, prepared beets in a single layer on a cookie sheet and freeze. Once the beets become frozen, pack and store them in freezer bags or freezer containers.
