To freeze green bell peppers, make sure to start with fresh, tender peppers, and wash them in cold or lukewarm water before starting to prep. After washing, slice the peppers in half, and then scoop out all of the seeds. Start cutting the peppers into smaller strips or pieces.
After cutting, blanch the peppers by boiling them in hot water and then immediately dumping them in a pot of cold water with ice. Make sure to thoroughly drain the peppers after cooling them to get rid of any excess moisture. Once dry, start bagging the peppers. Normal zipping freezer bags work well, but for the best results, vacuum-sealed bags work the best. After bagging, simply store the bags in the freezer.
