What is gelato made of?

Gelato is made of egg yolks, sugar, milk and flavoring ingredients, such as fresh fruits, nuts and chocolates. The traditional way of making gelato is by mixing, heating and chilling the first three ingredients. The flavor ingredients are then added and batched to freeze and incorporate air into the mixture.
Gelato is an Italian word that means ice cream, but gelato is different from ice cream in three ways. It has 3 to 7 percent fat, whereas ice cream has a minimum of 10 percent fat. It is denser than ice cream, having only 25 to 30 percent air whipped into it. Ice cream contains up to 50 percent air. Gelato is stored and served at a slightly warmer temperature than ice cream, which is served frozen.
