To make We Laugh We Cry We Cook's salad dressing, combine 1 cup coconut milk and 1/3 cup chopped dried fruits in a high powered blender. Start the blender on low and slowly increase the speed to high. Blend until the dressing is creamy and smooth. Add a pinch of salt, and then blend a bit more. Serve the dressing immediately, or chill for a thicker consistency.
