Some of the best vegetables for diabetics include lettuces, kale, spinach, arugula and other greens, according to WebMD. Fresh vegetables eaten raw or lightly grilled, steamed or roasted, as well as plain frozen vegetables lightly steamed, are good for a diabetic diet.
For a diabetic, fresh or frozen vegetables are preferable to canned vegetables, notes WebMD. However, unsalted or reduced sodium canned vegetables are better than canned vegetables with lots of added salt. Vegetables cooked with extra sauce, butter or cheese are not good choices for a diabetic diet. Diabetics who need to reduce sodium should avoid pickles and sauerkraut as well.
