Halloumi cheese is a type of brined cheese from Cyprus. It is traditionally made from a mix of goat and sheep milk. Its texture is creamy and chewy and resembles that of mozzarella. Unlike mozzarella, halloumi is noted for its saltiness and strong smell.
Cooking the cheese removes the salt and leaves the cheese's creamy texture and taste.
Halloumi has a high melting point and is often grilled. It is enjoyed during the summer months and is paired with wedges of watermelon and washed down with cold beer. Halloumi cheese is not processed with rennet, so it is acceptable to some vegetarians.
