Red cheese has a fat content of only 0.5 percent, and quark cheese has a fat content of 13 percent, notes Diabetes New Zealand. Choices such as brie, Parmesan and blue cheese have much higher fat content and should not be consumed except in very small amounts on occasion. It is recommended that diabetics use cheeses very low in fat for daily use, and cheeses high in fat should not exceed a cube 2 centimeters in size each week.
