Making ice cream the old-fashioned way, cranking the machine by hand, takes approximately an hour. At least 20 minutes of that time consists of turning the crank by hand as the ice cream forms.
After combining the mixture according to the ice cream recipe and placing it in the central can, the user packs rock salt and ice in the tub around the can. For a gallon of ice cream, 6 cups of rock salt and 15 pounds of crushed ice are necessary. After adding the salt and ice, the user turns the crank, which causes the can to revolve around the beater. Once the user has cranked for about 20 minutes, the can should be very difficult to turn. At this point, the ice cream is ready.
