The main ingredients in Mexico adobo sauce are chillies, vinegar, salt, spices and sugar. Adobo sauces vary by region, with each region adapting the sauce to its particular preferences. Cooks generally make Mexican adobo with jalapeno chillies or smoked or dried chipotle chillies.
To make Mexican adobo sauce, roast 6 to 8 topped bird’s eye chillies, 1 roughly chopped onion and 2 chopped cloves of garlic in an oil-free pan until charred. Place the roasted mix into a food processor with 1/2 cup vinegar and 1/2 teaspoon each dried oregano, thyme and salt. Add 1/4 teaspoon cinnamon and 1 teaspoon sugar. Process the mix until smooth.
