Butter Mints Recipe
Butter mints are a classic candy that taste great as after-dinner mints. They also make fantastic gifts. This recipe was originally published in "The Liddabit Sweets Candy Cookbook" and is hosted on the Splendid Table website.
Prep time: 20 minutes
Resting time: 6 hours
Ready in: 6 hours and 20 minutes
Ingredients:
- 1 stick unsalted butter
- 4 cups confectioners sugar
- 1/4 teaspoon peppermint extract
- 2 tablespoons whole milk
- A few drops of food coloring
- Blend the ingredients
- Knead the dough
- Roll and cut the dough
- Let the candy dry
Use an electric mixer to blend the sugar and butter together. Mix for 6 to 8 minutes until a creamy mixture forms. Mix in the peppermint and milk.
Knead the dough on a cutting board dusted with confectioners sugar. If using food coloring, knead a few drops of the chosen color into the dough. To make several different colors, divide the dough before kneading in the food coloring.
Sprinkle the cutting board with more powdered sugar. Split the dough into four pieces. For each piece, roll the dough into a 1/2-inch log. Dust the dough with sugar if it gets sticky. Cut the log into 1/2-inch pieces with a sharp knife.
To dry out the mints, lay them out on a baking sheet covered with parchment paper. Leave them to dry for at least 6 hours.
Butter mints are very easy to customize. To create different flavors, substitute the peppermint extract for ingredients such as coffee extract, instant espresso powder, cocoa powder or cinnamon oil. To make different shapes, roll out the dough and cut it out with small cookie cutters or press into candy molds.
