Crab and callaloo is a national dish in Trinidad and Tobago. The tenderly cooked crab is served whole in the middle of the dark green soup-like callaloo.

Callaloo originates from Africa. It is a thick soup or stew-based recipe that uses green leaves, such as okra, dasheen, spinach or callaloo. This dish has various recipes, some using coconut and even pigtails. Other popular dishes include freshly caught lobster and Creole dishes, such as stewed pigeon peas and macaroni pie. Curried chickpeas served as a fried bread sandwich are a popular snack. All of this can be finished off with a traditional drink of coconut water.
