Green bell peppers are high in vitamin C and potassium. They are a good source of vitamins A, B6 and K. One cup of chopped green pepper has only about 30 calories.
Bell peppers have about seven grams of carbohydrate per serving, with about three grams of this being dietary fiber. They are fat-free and very low in sodium. They contain about three grams of protein. Calcium, magnesium and phosphorus are present, and peppers have 11 percent of the recommended daily value of vitamin A.
Because green bell peppers are rich in flavonoids and phytochemicals, they reduce the formation of blood clots, lowering the risk of heart attack and stroke. Their antioxidants reduce inflammation and pain from inflammation.
