Italian wedding soup is made with orzo, a type of pasta that is in the shape of a large grain of rice. The word "orzo" is Italian for barley. This pasta is also sometimes called risoni, which in Italian means big rice.
Authentic Italian wedding soup is generally made without pasta. The soup contains small meatballs made with ground pork that are simmered in chicken broth. Fresh shredded escarole or chicory is added next. Whisked eggs are then drizzled in, making the soup similar to an egg-drop soup. Grated fresh Parmesan cheese is added to bowls of soup as they are served.
