How do you peel butternut squash?

To peel a butternut squash, cut off the ends, and then use a sharp vegetable peeler. The process is much easier if you cook the squash slightly to help soften the skin.
- Prepare the squash
Cut off the stem and blossom ends of the squash with a heavy knife. This preparation leaves a stable surface for the squash to stand on while you peel it.
- Use a vegetable peeler
Use a sharp serrated vegetable peeler if available. If you find the task of removing the peel nearly impossible, cook the squash in the microwave for a few minutes before peeling.
- Microwave the squash
Poke holes in the squash all over with a fork every two or three inches. This process allows steam to escape the squash while cooking. Microwave the squash on high for three or four minutes or until the skin becomes a little softer and looser. Use care when removing the hot squash from the microwave. Set the squash aside until it is cool enough to handle.
- Remove the peel
Stand the squash on one flat end. Peel off strips of the squash from one end to the other with a sharp vegetable peeler or paring knife.
- Proceed with your recipe
Due to the extra time spent in the microwave, you may need to cook the squash for less time than the recipe advises. This way the squash is perfect, instead of overcooked.
