How are prawn crackers made?

Prawn crackers are a combination of well-dried prawn meat and tapioca flour mixed with spices, then shaped and deep fried in oil. Prawns are similar to shrimp and these crackers are popular in parts of Asia.
There are several steps needed to make prawn crackers.
- 12 ounces prawns, peeled, deveined and head removed
- 16 ounces tapioca flour
- 1 1/2 teaspoon salt
- 1 1/2 teaspoon ground black pepper
- 2 quarts vegetable oil (for frying)
Step 1: Create the cracker dough
Dry the prawns well and add to a foot processor. Puree the meat until smooth. Add the flour and seasonings and pulse until a dough forms.
Step 2: Form the crackers
Roll the dough out flat. Place the dough onto steamer plates to steam for up to 45 minutes.
Step 3: Fry the crackers
Chill the cracker dough for a couple of hours. Preheat the oil to 350 degrees Fahrenheit. Cut the dough into cracker shapes and deep fry for a couple of minutes until golden brown.
