Prepare a petite sirloin roast by rubbing it all over with a mix of spices, herbs and light oil, and then cook in 350°F oven for up to 1 hour and 15 minutes. The roast should be allowed to rest for up to 10 minutes after cooking, before serving. A petite sirloin roast weighs approximately 1.5 to 2.5 pounds and has all of the connective tissue and fat removed.
Preparing this extra-lean piece of beef is a relatively simple process. It takes approximately 15 - 20 minutes of prep time before cooking, and is ready to eat in under 2 hours.
Ingredients:
- 1.5 lb petite sirloin roast
- 1 cup fresh parsley leaves
- 2 cloves fresh garlic
- 1 tsp. black pepper
- 1 tbsp. olive oil
Cooking the roast:
- Preparation
- Place in a pan
- Let roast rest
Preheat oven to 350°F. Blend parsley, garlic, pepper and olive oil until well mixed. Rub the mixture into the roast on all sides.
Put the roast with the fat side up on the roasting pan. Pop it in the oven for 60 to 75 minutes.
Place a heat-resistant meat thermometer into the thickest part of the roast. When the temperature reads between 135°F and 150°F, the roast is ready to be removed from the oven. Put the roast on a carving board and cover lightly with aluminum foil. Allow it to rest about 10 minutes before slicing.
