According to WebMD, purines are chemical compounds contained in foods. Purines break down into uric acid. High levels of uric acid in the blood contribute to the development of gout.
Foods that contain extremely high amounts of purines include organ meats, game meats, mackerel, gravy and beer. Gout sufferers should limit consumption of these foods in order to avoid triggering an attack. Green vegetables, fruits, some breads and cereals and nuts contain low levels of purines and are safe to eat. Dairy products such as yogurt and milk help lower the risk of gout. Exercise and weight regulation are also beneficial.
