What should be served with Beef Wellington?

Beef Wellington pairs well with simple side dishes such as roasted or mashed potatoes, steamed or roasted vegetables such as carrots, broccoli or asparagus, wilted greens or fresh salads. Because Beef Wellington is so complex and rich in flavor, combining it with lighter foods helps to create a balanced meal.
The traditional, labor-intensive Beef Wellington recipe consists of a pre-browned beef tenderloin covered with a layer of duxelles: a mixture of finely chopped mushrooms, shallots and fresh parsley and pâté. The tenderloin is encased in heavily buttered puff pastry and baked to make a golden, flaky crust. The roast is sliced and traditionally served with a flavorful Madeira sauce.
