How do you sprout mung beans?

To sprout mung beans, soak them overnight, drain them, and rinse the beans well. Place the beans in a quart-sized glass jar, and seal a piece of cheesecloth over the opening with a rubber band. Rinse and drain the beans every eight hours to grow the sprouts in two to five days.
- Soak the mung beans
Place 1/2 cup of mung beans in a bowl, and cover them with water. Let the bowl sit on the counter overnight.
- Rinse the mung beans
Pour the soaked beans into a colander. Rinse them with cold running water.
- Place the beans in a jar
Put the beans into a quart-sized glass jar. Cover the jar with cheesecloth, and fasten the cloth with a rubber band. Place the jar in a warm, ventilated area with dim lighting.
- Rinse and drain every eight hours
Every eight hours, add water to the jar. Swirl gently to rinse the seeds. Drain the excess water off the beans, replace the cheesecloth, and return the jar to a warm spot outside of direct sunlight.
- Harvest
Once the beans are sprouted after two to five days, rinse them a final time, and store the beans loosely covered in the refrigerator.
