The peels of bananas placed in the refrigerator may brown, but the fruit will stay fresher longer. Bananas ripen because the starch is converting to sugar making a riper, sweeter banana.
Once past the ripening stage, the bananas begin to brown. The stems release ethylene gas, which seeps into the other parts of the fruit and changes its color.
