Pork should be cooked to a minimum inner temperature of 145 degrees Fahrenheit and then allowed to rest for 3 minutes before serving. Ground pork requires a slightly higher temperature.
Ground pork needs to reach a minimum inner temperature of 160 degrees. A meat thermometer should be used to confirm the inner temperature of the pork whether the meat is whole or ground. Pork will still have a slightly pink color when it reaches 145 degrees, which might create concerns about it being thoroughly cooked, but the National Pork Board and USDA agree on the safety of pork cooked to that inner temperature.
