When drying jalapeño peppers, work in a well-ventilated area, since the peppers give off fumes during the drying process that may irritate eyes. Opening windows and turning on ceiling fans increases air flow and reduces irritation.

Wear gloves, and avoid touching your eyes or noses during the drying process. Always wash hands thoroughly after handling peppers to remove the capsaicin.

Dry jalapeño peppers in the oven, outdoors on drying sheets or strings, or in a food dehydrator. Once the peppers have lost their moisture, store the peppers in plastic bags, then chop them, crush them or use them whole in recipes.
