White flour is made from a small portion of the wheat berry. It is bleached to give it the white appearance.
A grain of wheat, also known as a wheat berry, is made of three parts. These parts include the bran, germ, and endosperm. White flour is made from the endosperm. This causes white flour to not have as many nutrients as other forms of flour. White flour is compromised of mainly all starch due to the process used to create it. The process to make flour has been sped up which does not give the flour time to age properly. Wheat flour is made using all of the wheat berry. This adds more fiber into the flour.
