A white kidney bean is a variety of kidney bean which has a significantly lower concentration of the toxic substance hemagglutinin than other kidney beans. The white kidney bean is considered by some to be a superfood because it has vitamins, fiber and antioxidant properties.
White kidney beans are high in both soluble and insoluble fiber. Eating foods that are high in fiber promotes digestive health and prevents conditions such as constipation and irritable bowel syndrome. Fiber also prevents blood sugar levels from increasing too quickly, especially in diabetics. White kidney beans also decrease the level of bad cholesterol in the body.
