What are animal fats called?

Animal fats have different names, depending on the types of animals that the fats come from. Types of animal fat include lard, tallow, schmaltz and duck fat.

Lard is derived from pigs. It was praised by Food & Wine in December 2005 as a way to fry up chicken. NPR suggests lard as an ingredient for a more appetizing cornbread.

Tallow comes from cows. Tallow is used for cooking, frying and making products like soaps and candles.

Schmaltz is chicken fat combined with minced onions. Schmaltz, according to NPR, offers a flavorful taste that works well in soups.
