What are some basic types of sugar?

Regular sugar, confectioner's sugar and fruit sugar are basic types of white sugar. Turbinado sugar, evaporated cane juice and demerara sugar are basic types of brown sugar.

Regular white sugar is the most familiar form of sugar, and is usually the sugar called for in recipes. Fruit sugar has smaller granules and is often used in dry drink mixes. Confectioner's sugar, or powdered sugar, is used to make pastry icing. Turbinado sugar and evaporated cane juice are minimally processed types of sugar. Demerara sugar consists of large sugar granules coated with molasses. Muscovado sugar, a type of brown sugar, also consists of large granules and has a strong flavor.
