According to Mom's Budget, it is often better to use the low setting on a slow cooker, particularly for tough cuts of meat. Cooking a tough piece of meat for a longer period of time using a low setting makes it more tender.
Using the low setting to cook when no one is home also decreases the chance of overcooking a dish if the chef is not able to turn off the slow cooker at the time originally intended. It is possible, however, to purchase a slow cooker that switches to a programmable "keep warm" setting to ensure a properly cooked meal.
