Pecan pie freezes very well after baking. In fact, most pies that do not include custard can be frozen without suffering in flavor or texture.
Before freezing a pecan pie, the pie needs to cool completely. The pie should be wrap it tightly in one layer of plastic and two layers of foil to prevent flavors from goods stored in the freezer seeping in to the pie. This is a fantastic way to lower the kitchen's workload on days with large dinners, such as Christmas and Thanksgiving. For thawing, the pie should be left in the refrigerator overnight and then put in a 300-degree oven for a short time to give it some warmth.
