Can you make a cheese ball with pimento cheese?

Many variations of cheese ball recipes include pimento cheese. Known as "the caviar of the south," pimento cheese is traditionally cheese, pimentos, salt, pepper and mayonnaise combined to create a paste.

The basic recipe uses either processed or sharp cheddar cheese, but substitutions such as Monterey Jack and cream cheese are acceptable. When making a cheese ball, there are several flavors that can be combined into the pimento spread, such as onions, paprika, Worcestershire sauce, cream cheese and garlic. Additional options include lemon, Louisiana-style hot sauce, cayenne pepper, green pepper, paprika, jalapeños and dill pickles.The pimento paste itself can be either smooth or chunky to add a different texture to the ball.
