Unlike flax seeds, chia seeds do not need to be ground or processed for the body to absorb the seeds' fiber, protein, copper, iron and omega-3 fatty acids. Chia fresca is a hydrating beverage, while chia gel makes a good egg replacement for baking or a thickener when added to soups and smoothies. Additionally, add chia gel to condiments or dressings to reduce fat and calories.
