Some sommeliers also recommend pairing fruity red wine with chocolate, as the acidic tang of the fruit helps to bring out the richness of the chocolate. A good rule is to match the qualities of the chocolate to the qualities of the wine, pairing sweet, thick wines with sweet, rich chocolate, and more bitter, dry wines with bittersweet chocolate.
