Where does clam juice come from?

Claim juice is broth made from briefly steaming shucked clams. The broth is strained to remove grit and sediment and bottled as clam juice, while the meat is packaged and sold separately. Most brands do not add any other ingredients besides salt to the final product.

Clam juice can be used as a substitute for fish stock in dishes like clam chowder and bisque. It is often used as a flavor enhancer rather than for drinking, although some cocktails call for clam juice, such as the "Low Tide Martini" and the "Caesar." The Mott company makes a beverage called Clamato that contains tomato juice and clam juice.
