As of 2014, Bermuda onions have white, yellow or red skin, depending on the variety. Most Bermuda onions cultivars have flat tops, white flesh and a mild, sweet flavor. Popular Bermuda varieties include white Bermuda, yellow Bermuda crystal wax, red burgundy and excel.
Bermuda onions originated in the Canary Islands and made their first appearance in the United States in 1890. Since that time, numerous hybrids have been created to increase production rates and quality. These onions, which can be planted from seed or sets, take approximately 95 days to mature. The sweet, mild flavor of Bermudas is a perfect addition to salads, sandwiches and slow-roasted meats.
