How do you cook calabaza squash?

Calabaza squash may be cooked in a number of different ways, including sautéing or baking. It can be cooked in a similar way to summer squash or butternut squash; however, the hard skin must be removed.
Calabaza squash has a mild taste that makes it work with fish and stew. It may also be pureed and used as a pie filling. The small pumpkin-shaped squash is often substituted for butternut squash or pumpkin in recipes due to availability. Once prepared, the squash may be stored for a week to 10 days. Whole calabaza squashes may be stored for about a month before cooking.
