Delicata squash is a type of small, elongated winter squash with cream or yellow skin sporting green or orange stripes. The skin is thin and edible, while the flesh is sweet and has a corn-like flavor. Delicata squash is also known as Bohemian squash and peanut squash.
A delicata squash typically weighs less than a pound. The thin skin of the delicata squash means that peeling is not necessary. However, this trait also reduces the shelf life of the squash and makes it more susceptible to cuts and bruises. Delicata squash is suitable for sautéing, steaming, stuffing and roasting. It is a good source of vitamin A and C.
