One of the biggest differences between Hunan and Szechuan cuisine is that Hunan dishes use the seeds and membranes of chili peppers and Szechuan dishes use a chili bean paste. This makes Hunan foods hotter.
The residents in these two regions of China generally prefer eating spicy, hot foods to counter the heat and humidity of the area. Preparing Hunan cuisine takes more time than preparing Szechuan dishes. Orange Beef and Crispy Duck are a couple of well-known Hunan dishes. Popular Szechuan dishes include Kung Pao Chicken and Mapo Tofu. Those who reside in the Szechuan area consume 70 percent of the rabbit eaten in China.
