What are the different types of meat?

Different types of meat include beef, lamb, pork, poultry and wild game. Many of these meats come in different types of cuts that require somewhat different preparation and cooking methods.

Cuts of meat differ from country to country. Beef, veal, lamb and pork are mostly cut into loin, rib, round, roast, shoulder and leg portions. Pork bellies, hams and bacon are also valued, as are sweetbreads, liver, kidneys, tripe, caul fat, tongue, heads, tails, feet, heart and brains. Meat from furred game includes rabbit, venison and wild boar.

Types of poultry include not only chicken and turkey but also ducks, geese, quail, pheasant, guinea fowl, snipe, pigeons and squab.
